We are a Santa Barbara bakery specializing in delicious organic pies, quiches and cheesecakes! We are committed to supporting our local farmers and community by using locally grown seasonal organic fruits, vegetables and antibiotic/hormone free free-range eggs in our handcrafted bakery items. All of our other organic ingredients, including dairy, are purchased from local businesses and co-ops.

By using locally grown seasonal produce we can guarantee the finest, freshest ingredients to produce the most delicious product for you and your families to enjoy. We are the only local pie shop offering organic pies, as well as GLUTEN FREE and SUGAR FREE crusts. Our pricing is competitive. Give us try and see the difference!

HOW TO PURCHASE OUR PIES and other items:

Ordering a pie is easy! You can order a pie by email or phone, and we will arrange a convenient time for you to pick up your order Tuesday through Friday or we can deliver to your door (for a small extra charge.) Or visit us during our Saturday retail hours 11am - 3pm. It's that simple! So give us a try - you surely won't be disappointed :)

BAKING INSTRUCTIONS for PIE SHELLS

For Single Crust Pies or Quiches
1. Preheat oven according to your recipe.
2. Remove pie crust from freezer.
3. Pour filling into crust, and bake as your recipe directs.

For Double Crust Pies
1. Preheat oven according to your recipe.
2. Remove pie crusts from freezer, allow to thaw.
3. Pour filling into crust. Brush edge of crust with water.
4. Take second thawed crust out of pan and place over pie filling, press edges together to seal.
5. Cut a few slits in the top crust to allow steam to escape.
Optional: Brush pie with a small amount of cream then sprinkle with 1 tablespoon of sugar.

For No Bake Pies
1. Preheat oven to 425°F.
2. Prick bottom and sides with a fork all over the pie crust.
3. Bake empty pie crust in preheated oven on center rack until golden brown around the edges about 10 minutes.
4. Remove from oven, let cool and pour the no bake filling of your choice into the pie crust.

Product will be very hot. Use caution when handling. Individual ovens may vary. Baking instructions should be used as a guideline.

BAKING INSTRUCTIONS for FRUIT PIES

Preheat oven to 450˚ F with sheet pan or cookie sheet in oven.

Cut 5 steam vents in top pie crust. Brush lightly with cream or milk. Sprinkle with sugar. Place foil ring on edges of pie crust if not in place.

When oven reaches temp, place pie in oven on sheet pan.

Bake at 450˚ for 10 minutes.

Reduce oven temp to 425˚ F and bake for approximately 50 minutes or until top is browned and filling is bubbling slightly through steam vents. If top browns too quickly before filling bubbles, lay foil sheet loosely over top of pie. Make certain to keep steam vents open by gently running knife through slots if necessary.

Remove pie from oven and allow to cool for at least 2 hours before slicing. Do not cover while cooling.

After completely cooled, store at room temp covered with foil. Refrigerating will compromise crust texture.
